Currently Wanderlusting…

… crisp white kitchens with marbled grey countertops, subway tile backsplash, bold statement mid-century lighting, copper hardware, a gorgeous range hood and TONS of natural light! Is that really too much to ask?!

Apparently it is if you’re moving to crap nowhere Virginia. We are currently in the process of house hunting (going on a mere 7 months now – yes 7 freaking months) and no matter how high we stretch our budget or extend the commute, I can’t find a single decent kitchen in ANY of the houses that have at least 3 bedrooms, aren’t in the middle of a RED area (with an average of 100 crime reports inside a month) and have any resemblance of a yard. I have heartburn even broaching the topic of moving again but the idea of not having a dream kitchen to look forward to just breaks my wee little heart.

But damnit, I refuse to give up my search until I find something cheap enough to redo myself or miraculously find that one house that has MY kitchen in it – I will give up sq footage any day of the week for natural light and open space!

How about you? Is a to die-for kitchen on your dream house must list?


Foodie Friday: faux ham fried rice

Have you ever been craving some really good Chinese food takeout and look forward to ordering your dinner all day when you suddenly realize your WAY more broke than you thought?

If so, then your day was just like mine and we should probably be friends. Thanks to an enormous vet bill and the ridiculous amount of money we’ve been dumping into our house to get it sold my bank account is beyond pathetic right now and the idea of spending money on take out made me cringe. Suffice it to say the decision to cook at home was pretty much made for me.

Enter dilemma number dos. We have no food in our house and the grocery store was completely out of the question.  I was way beyond the point of no return. Sweatpants were  on, makeup off, hair in a messy bun and all the dogs finally fell asleep. Luckily, one of the few things  I have ever been good at, is making something out of nothing. I can’t even begin to tell you the amount of meals I made in college out of two to three ingredients due to lack of fundage.

The rifling through cabinets, pantry and fridge didn’t yield much, but enough to make a meal out of. I found some turkey ham, box of rice, egg beaters, peppers and celery. I remembered when I made some fried rice after Easter last year with leftover maple ham and knew there were enough of the basic ingredients to make it work. For those of you (like me) that are trying to drop some pounds or trying to eat healthy this recipe is actually packed full of lean protein, high fiber, low cholesterol, whole grains and vegetable servings.

SO what do you think? Is this something you would try on a weeknight for a quick dinner or when you’re too broke to shop?


Side notes:

  • I used about 3 C. chopped turkey ham
    • any meat can really be used fro this recipe, chicken, canadian bacon, bacon, sausage, etc.
  • I didn’t have any peas or carrots so I substituted that with red and green peppers
    • any vegetables can be used for this – baby corn, water chestnuts & broccoli would have been my go-to
  • I also added 2T PB2 to my rice to give a protein boost and more of a Thai flavor – this works wonders with rice noodles too!
  • If you want to give it more of an authentic fried rice flavor you can add 1-2T butter to the mixture once youve added the rice into the veggie mixture


Babies on Babies on Babies

Anyone that knows me knows I’m literally (ok maybe not literally but as close to as you possibly can be) allergic to babies. I’ve never been a fan of the idea of having kids and even starting a conversation about why sends me into a tailspin. Really though, isn’t it normal to be a tad hesitant of a little alien that developed inside a person into a whole other little person with tiny little extremities and is only capable of crying, eating and sleeping? I’m also convinced that babies are decidedly contagious –  how else do you explain when everyone you know is suddenly pregnant at the exact same time?!

Right about now im sure the majority of you are either shaking your heads, in disbelief, or even saying “she’ll change her mind” – am i right? Of course I’m right! I know this because the very second you tell someone that in fact you have no plans to have children, their first response (9 times out of 10) is one of these two :

  1. “how do you know you wont change your mind?”
  2. “how old are you?”

Those are then followed up with one or both of these:

  1. you have plenty of time to think about it
  2. you will regret it if you don’t

Don’t get me wrong, I’m not saying having kids is bad or wrong or what have you – I’m simply saying its my choice to not have any – hindsight, that could have been an entire blog post on its own and still may be – this was really just a long-winded intro. to provide the breadth of what a MAMMOTH step I took this past year.

If you haven’t guessed already, I started taking NEWBORN photos!!

Full disclosure this step into a world of the unknown for me would never have been possible without the amazing friends and clients I’ve had here in Florida. I owe them more than any thank you would suffice and I truly appreciate them believing in me enough to not only push me to start taking these photos but also for believing in me that I could do it when I truly didn’t think I was capable.

Provided is a small gallery with a few of my favorite shots from the newborn sessions – I tried my hand at all three styles – at home studio posed, at home lifestyle, and outdoor.

Hopefully you will see the beauty in them and my small steps at branching out. There is a long way to go and a lot of learning left for me!

“Guess Who’s Back, Back Again”…

I AM BACK, tell a friend!

Talk about a hiatus huh?! I mean it’s only been about 3 years since I last posted.

Well kiddies, welcome back to the blog and stay tuned as I fill you in on the last three years of my life and how amazing everything has been.

Full on rainbows and unicorns.

SIKE!  To be honest,the past few years haven’t been all bad, some pretty amazing things have happened and overall I’ve been pretty lucky. However, with the good comes the bad and the real.

Before you bail on me, click on your next screen tab, or start typing a new website in your search bar, just know this isn’t a sob story or a pity party. THIS my friends, is a Mission Statement. I fully take responsibility for the complete unraveling of my self-worth, anxiety ridden day-to-day struggle and I’m refusing to stay in the shell I created out of fear.

So why not share it with the world? I mean, these days, who doesn’t want to know your every single move? Am I right? I mean I’m right, right?! – this is the digital age after all (actually hate myself a little for saying it and fully expect all of you to be rolling your eyes).

Alas! this is it – the list of change. “They”- you know the proverbial ‘they’ that everyone always quotes because we never have a clue who actually force fed us the motivational crap but now were hooked so we requote it – say “you can’t change your life until you change things you do on a daily basis”.

  • I WILL find beauty in the everyday
  • I WILL be creative
  • I WILL set aside time for myself
  • I WILL manage my expectations (insert reality v. instagram meme here)
  • I WILL read more
  • I WILL set aside more money to travel
  • I WILL choose to be happy (because let’s be real, it IS a choice and we need to consciously make an effort to choose the happiness)

Foodie Friday: Stars and Shield


Growing up in a military family makes the 4th of July one of the best holidays every year – Full of outdoor fun, the occasional attack by water balloon, extremely competitive football games, the most amazing BBQ food, friends abound, and of course staking out the best seats for fireworks!

Unfortunately, since living on a rock in the middle of the Pacific, it notoriously rains every year on the 4th forcing the BBQ to be done under cover or indoors, the water balloons being useless due to torrential downpours, turning the football games into video games or movies, and most sad of all NO FIREWORKS! :(

So what do you do when the most patriotic day of all days suddenly becomes the most depressing? … Make a Captain America inspired Fourth of July Cake OF COURSE!


I wanted something that screamed 4th but wasn’t the same old flag laid out on a sheet cake.

Plus, I’m always inspired by super heroes so why not include something from the most iconic American hero ever right?! Then how do you make it even more American??? You make the cake chocolate and the frosting peanut butter banana with maple bacon pieces. Yep – I said it, maple bacon — If your mouth isn’t watering right now then you aren’t a true red white and blue.


 (yea, I have Superhero prints framed all over my house – told ya – nerd)

I hope everyone has an amazing fourth and enjoys all the great picnic food and fun I didn’t get to :)
