Foodie Friday: Pomegranate Vanilla Quick Bread

YUMMY! doesn’t that combo of flavors make your mouth water just thinking about it ?! If it doesn’t, then hold your horses, because, this recipe can be adapted to accommodate tons of flavor varieties, such as, cranberry orange, coconut pecan, cherry almond, and so on and so on, just dream it up and make it happen :)

I have also listed the alternate ingredients to make a low calorie, low fat, and gluten free bread. It tastes just as amazing and the best part is that its guilt free!


  • 2 cups all-purpose flour or coconut flour
  • 1 cup sugar or sugar substitute such as baking splenda or stevia
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chopped dried pomegranate
  • 3/4 cup milk or almond milk
  • 2 eggs or 1/2 cup egg substitue
  • 8 Tbs. (1 stick) unsalted butter, melted and cooled or 1/2 cup natural applesauce
  • 1 tsp. vanilla extract


Preheat an oven to 350°F. Lightly grease an 8-by-4-inch loaf pan.

In a large bowl, whisk together the flour, sugar, baking powder and salt. Add the pomegranate and toss to distribute evenly.

In another bowl, whisk together the milk, eggs, butter and vanilla extract. Add the milk mixture to the flour mixture and stir until combined. Do not overmix.

Pour the batter into the prepared pan. Bake until the top of the loaf is golden brown and a toothpick inserted into the center comes out clean, about 55 to 60 minutes. Transfer the pan to a wire rack and let cool for 10 minutes.

Turn the loaf out onto the rack and let cool completely before serving.

Yields 1 loaf.
