Foodie Friday: Pomegranate Vanilla Quick Bread

YUMMY! doesn’t that combo of flavors make your mouth water just thinking about it ?! If it doesn’t, then hold your horses, because, this recipe can be adapted to accommodate tons of flavor varieties, such as, cranberry orange, coconut pecan, cherry almond, and so on and so on, just dream it up and make it happen :)

I have also listed the alternate ingredients to make a low calorie, low fat, and gluten free bread. It tastes just as amazing and the best part is that its guilt free!

Ingredients:

  • 2 cups all-purpose flour or coconut flour
  • 1 cup sugar or sugar substitute such as baking splenda or stevia
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chopped dried pomegranate
  • 3/4 cup milk or almond milk
  • 2 eggs or 1/2 cup egg substitue
  • 8 Tbs. (1 stick) unsalted butter, melted and cooled or 1/2 cup natural applesauce
  • 1 tsp. vanilla extract

Directions:

Preheat an oven to 350°F. Lightly grease an 8-by-4-inch loaf pan.

In a large bowl, whisk together the flour, sugar, baking powder and salt. Add the pomegranate and toss to distribute evenly.

In another bowl, whisk together the milk, eggs, butter and vanilla extract. Add the milk mixture to the flour mixture and stir until combined. Do not overmix.

Pour the batter into the prepared pan. Bake until the top of the loaf is golden brown and a toothpick inserted into the center comes out clean, about 55 to 60 minutes. Transfer the pan to a wire rack and let cool for 10 minutes.

Turn the loaf out onto the rack and let cool completely before serving.

Yields 1 loaf.

DIY: Facial Pore Exfoliant

Having an Italian grandfather will teach a girl a lot about life – mainly the amore of cooking, appreciation for crusty bread, the importance of wine with food, and that balsamic vinegar and a little olive oil can solve all of the world’s problems.

Thus, I learned that olive oil is the Italian equivalent to the Greeks and Windex (if you havent seen My Big Fat Greek Wedding– that may go over your head).  However, my favorite use for olive oil (outside of food of course) is a brilliant pore exfoliator that when used 1-2 times a day for about a week will literally shrink the size of your pores and eliminate blackheads- yea, its that good!

In a world where everything is chemically treated, manipulated, enhanced, broken down, vegan, gluten free, full of false information, its a welcome relief to use one product that couldn’t be more natural or beneficial for your skin.

Olive Oil Pore Exfoliator

  • Pour a quarter sized amount of Extra Virgin Olive Oil into the palm of your hand or into glass dish
  • Gently apply the oil in a circular motion all over your face – concentrating on areas you are prone to blackheads – for about 1-2 minutes
  • Take a clean wash cloth (preferably all natural fiber or white wash cloth – so there are no dyes or perfumes on the fabric) and wet with the hottest water you can stand
  • Lightly ring out the wash cloth and hold it over your face until it becomes cool (about 30 seconds) in order to steam the dirt out of your pores
  • When the cloth cools, rinse it out well and repeat the previous step with the hot water, only this time before the cloth cools, gently rub the remaining oil off your face
  • Then pat dry with paper towel or clean towel

Voilà!

You are done and your skin will feel as soft as a newborn’s butt – though I’m not really sure I even know what a newborn’s butt feels like since I am allergic to babies, so lets say – as soft as your favorite silk scarf :)

Caveat:

If your skin is dry only do this once a day and at night is better, but if your skin is normal to oily then apply twice a day and in about a week you wont notice your own face!

The Best of My Weekend…

Of course the biggest highlight of the weekend was going to see Man of Steel — and holy bananas was it was WORTH every minute of anticipation.  If you have yet to get your butt to a theater and see it – I don’t have a clue what you’re waiting for- get there, NOW.

It’s no secret that the hubs and I are huge comic book fans, (though I’m a true nerd, and he’s just a dude that is obsessed with super powers) so it was only fitting that in true fan fashion we sported matching shirts to the film debut.

IMG_1586Second, My “cheat days” always fall on the weekends and I often find myself indulging in three main things – mike and ikes, sourdough pretzels, and my absolute MUST Italian soda.

I don’t know what it is but it has the perfect mix of fruity and carbonated flavors. Its a necessity when Saturdays roll around.

IMG_1572To counter my inflation of carbs and calories on the weekend I step up my workouts and kick my arse with ballet blast.

It’s an intense workout that is an hour of ballet combined with weight lifting. Let me tell you, it is well worth the sweat dripping down your back when you’re done because you instantly feel refreshed, accomplished, and even better, you see results within 2 weeks!

IMG_1591After feeling like my ballet blast has really paid off, I decided to finally break in my short shorts and sport some of my favorite summer sandals.

IMGP1738Lastly, I naturally indulged my inner child (as if I don’t everyday) and decided to finally break down and put some of my Star Wars Legos together.

Sometimes, you need to just remember how fun it was to be a kid and for a day, an hour, or even a minute forget the realities of your adult life.

Times They Are A Changin’…

… when it comes to weddings anyhow.

So what do you get that young couple that has been dating for quite some time, already been living together, seemingly has everything they could need or want already, recently announced their wedding and has no gift registry? Beats me!

Two of my cousins are getting married this summer and they are two of the most amazing and accomplished women I know and we grew up incredibly close. Both have been dating their now fiancées for years and both couples have been living together for quite some time, leaving me at a crossroads when it comes to the gift giving.

When traditional doesn’t apply to the way couples are meeting, dating, or even getting married, do traditional gifts still apply?  Are the days of giving household goods and monogrammed towels extinct, especially when more and more brides are keeping their last names? When the couples don’t have a gift registry do you ask them outright what they want or need, do you make an educated guess on what they might not have at their home already, or do you buy something for the wedding day itself?

These are all the things that have been occupying my brain as of late, as I try to figure out what in the world I get for two people who are family, who I love dearly, who I’m incredibly happy for, but whom I know nothing about in most every sense of their adult committed life or their soon to be husbands.

 I have been racking my brain, and feverishly searching online. My solution – ETSY! Etsy is such an amazing community of unique finds and a genius idea to market all the ideas that you yourself hadn’t though of yet. So after a few hours of searching I found quite a few brilliant ideas and pieces from shops that I’m completely smitten with.

I have to admit, I may be getting one of these for myself this year for our anniversary I’m completely obsessed with the idea of the latitude and longitude coordinates of your wedding or where you met or even a place that is special to only you as a couple! This beauty is from HarveyGrey.

Lastly is another take on a lovely print with a simple saying in a gorgeous presentation with an Est. date – which personally is another thing im obsessed with, i think its so chic to say when your family was established rather than your wedding date is – this loveliness is from PrintChicks.

DIY: comic book wall art

Lots and lots of bare white walls is no fun for anyone.

However, covering every inch of those white walls with paint is no fun either when you have to re paint them white in a year when you move out, and plastering them with mixed frame photos can only be done so many times before it looks like you have split personalities spilled all over your home.

So, why not make a few odds and ends to fill some random space? At least that was my mentality when I started to make some word wall art out of a comic book.  To stay true to my geekdom ways and love for all things peter pan related, I chose one of my all time favorite phrases “Never Grow Up” to adorn a wall visible from almost all of the house as a daily reminder to always have a little fun.

Lovies, grab yourself some thick scrapbook paper, stencils (if your free hand isn’t too reliable), pair of scissors, plain white paper, black Sharpie, decoupage glue and sealer, exacto knife, and a comic book of your choosing.

  1. Stencil your letters or free hand them onto plain white paper. I used printer paper and fit 1 of the larger letters on 1 sheet each and 2 of the smaller letters on each sheet
  2. Then mount the plain white paper on the thick construction paper so that the glue has something to seal to without the paper falling apart or curling over on itself.
  3. Shade the letters with the sharpie marker to make the 3d effect really pop. Black works best, but any dark color that goes with your theme will work.IMG_1141
  4. Then start cutting out your pieces of comic book. I tried to use the same page of comic for as many letters as I could and follow consecutively so that the comic looked as if it were playing out on the letters. I also cut them extra small and layered them in all directions to give it more movement.
  5. After all the letters had comic glued onto them, I spread the decoupage sealer back over top of all the letters to seal them in place and to add that shiny effect that comic books have. I went over  them twice to make them extra shiny.IMG_1142
  6. This step is optional and ultimately the only reason I did so was because i mounted the letters free from onto the wall
    1. then cut the letters out of the scrapbook paper with the exacto knife (all I had handy was my pocket knife- but it did the trick) IMG_1152
  7. Mount your letters and stare in awe at all your crafty genius!

Sunday Is Not a Day of Rest…

… or at least it wasn’t for my muscles anyhow.

Normally I vary between Wednesdays and Sundays being my day off of lifting but this week I found myself overwhelmed with the necessities of everyday life and wound up cutting workouts short more times than I would have liked.

So I snuck this gem of a workout in this morning and I feel like it may have made up for my semi slacked and lazy day yesterday.  Hopefully you are all having a great start to your week full of sweat and glory :)
