YUMMY! doesn’t that combo of flavors make your mouth water just thinking about it ?! If it doesn’t, then hold your horses, because, this recipe can be adapted to accommodate tons of flavor varieties, such as, cranberry orange, coconut pecan, cherry almond, and so on and so on, just dream it up and make it happen :)
I have also listed the alternate ingredients to make a low calorie, low fat, and gluten free bread. It tastes just as amazing and the best part is that its guilt free!
- 2 cups all-purpose flour or coconut flour
- 1 cup sugar or sugar substitute such as baking splenda or stevia
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup chopped dried pomegranate
- 3/4 cup milk or almond milk
- 2 eggs or 1/2 cup egg substitue
- 8 Tbs. (1 stick) unsalted butter, melted and cooled or 1/2 cup natural applesauce
- 1 tsp. vanilla extract
Preheat an oven to 350°F. Lightly grease an 8-by-4-inch loaf pan.
In a large bowl, whisk together the flour, sugar, baking powder and salt. Add the pomegranate and toss to distribute evenly.
In another bowl, whisk together the milk, eggs, butter and vanilla extract. Add the milk mixture to the flour mixture and stir until combined. Do not overmix.
Pour the batter into the prepared pan. Bake until the top of the loaf is golden brown and a toothpick inserted into the center comes out clean, about 55 to 60 minutes. Transfer the pan to a wire rack and let cool for 10 minutes.
Turn the loaf out onto the rack and let cool completely before serving.
Yields 1 loaf.

… or at least it wasn’t for my muscles anyhow.
Normally I vary between Wednesdays and Sundays being my day off of lifting but this week I found myself overwhelmed with the necessities of everyday life and wound up cutting workouts short more times than I would have liked.
So I snuck this gem of a workout in this morning and I feel like it may have made up for my semi slacked and lazy day yesterday. Hopefully you are all having a great start to your week full of sweat and glory :)
…. you fall asleep with a video game controller in your hand and your wake up call is an online player yelling at you in your headset. Sadly, this is what happened to me yesterday.
The weather has been very dark and rainy and the house even more dark and empty due to my husband being gone again (bleh- the life of a military spouse), thus allowing my geekdom to make a full time appearance.
Now don’t get me wrong, there is NOTHING wrong with being a total nerd and having a love of all things comic book, video game and anime related, but when you’re a 28 year old chick you tend to keep it on the low for the most part. When I was in the Navy it was much more acceptable for this side of me to make an appearance due to the fact that all the dudes surrounding me were indulging in their inner child too — or rather maybe just indulging since dudes never really grow up.
Ah, I regress, it seems that as we age we tend to put aside parts of our personalities in order to “fit in” or appease the others around us. I however, haven’t ever really been able to do so. I am very blunt, for the most part too honest, and a nerdy tomboy that loves pretty things and using clever words.
All traits, which I never intend to change because in a way it has become my armor. Not in the sense that it shields me or prevents me from anything but more so in the way that I can see bull crap from a mile away and know when people aren’t being authentic or honest with who they are. I mean really, who has time for all the high school nonsense when you’re almost 30?! I assure you, I do not.
Knowing who you are and not worrying about changing any of it or putting it out for all to see also helps you to appreciate yourself. I recently discovered just how freeing it was, when I did a photo shoot to celebrate my nerdy side and loved every minute of it.
So bloggie lovers, what side of you do you tend to put aside for others, or are you proud of all your bits and pieces, because you SHOULD be :)
When its summer year round it’s easy to take gorgeous weather and sun soaked private beaches for granted (sad, but true), so today my brain finally decided to smack me with common sense and convince me to get the hell outside!
I traded up my backyard palm trees for crashing waves, the mirror lined walls and heavy grunting from overly buff dudes of the gym for dumbbells in the sand and friends in the form of fish, and the confines of my jeans and heels for a bikini and snorkel mask. Trade ups which I plan on making a few times a week from here on out.
Sometimes, I really want to just pat myself on the back for a stroke of genius that leads to loads of fun :) So dolls get outside and take in some fresh air. Don’t let the weekend pass you by without enjoying it.
Living in the middle of the pacific, on a really small rock, with one “mall”, with the only recognizable stores being Macy’s and Gap, puts a bit of a hitch in a girl’s shopping giddy up. Needless to say I am an avid online shopper.
That being said, I have also come up with my own system that seems to work pretty well for someone on a budget or anyone looking to save on exorbitant shipping fees (i.e. me).When I place my orders online I do it from only one place at a time and try to get as many things as I know I
want need. When shipping fees range anywhere from $5 -$100 regardless the weight, it has become the most efficient and monetarily savvy way for me to indulge in all my consumer whims.
